Vito Barbanente, chef/owner of Pescatore Palace believes October is a glorious month. October is not just a glorious month because leafs begin changing color and the weather is mild, but because it is National Seafood month. Seafood is a glorious thing to Vito, a native of Mola di Bari, Italy, a small fishing town that lies on the Adriatic coast.

Anyone who's dined at Pescatore Palace knows its reputation for fresh, delicious seafood dishes, as well as the generous portions. Everything is cooked to order and menu choices are plentiful. Some favorites include: Linguini Tutto Mare (a combination of shellfish, mussels, clams, shrimp, crab legs, scallops, and calamari served over a bed of linguini with either a white or red sauce), the Adriatic Grill Mix (fresh Sea Bass and Salmon), the mouth watering Tilapia Florentina, our Zuppa di Mare, and our Lobster tails cannot be forgotten.

In honor of National Seafood Month, Vito Barbanente would like to share some of his favorite seafood recipes:

Fish Salad - Squid, octopus, cattle fish marinated in olive oil, vinegar and mild giardiniera.

Grilled Calamari/Octopus - The balsamic vinegar is a key ingredient here. One bite and you'll be back for more!

Stuffed Seppie - (Cuttle Fish/ Calamari Family)—A winning dish, stuffed with bread dough, garlic, parsley, parmigiano, and egg.

Fried Calamari - A classic Italian favorite. Fried in corn oil, blended with extra virgin olive oil. It's light, tender and moist.

Jumbo Scampi - Sautéed w/brandy, olive oil, garlic, and squid ink with a side of capellini.

Linguini Shrimps Pescatore Style - pasta sautéed with leeks, shrimps, asparagus, and cherry tomatoes.
